Apple Health is a software tool that exists on iOS devices (i.e. iPhone) to aggregate a wide range of health related metrics. iPhones by themselves do store a lot of data within Apple Health and so do Apple Watches, if linked to the same iPhone. Additionally, other apps and devices (such as Oura Ring or Withings) can write into Apple Health too.
By default, all data in Apple Health is stored locally on the phone, but can be backed up (e.g. in iCloud) alongside all other information.

By default, a wide range of data coming from the phone itself will be stored, including
- Steps / Walking+Running distance
